Winter soups are a nice way to prep ahead and enjoy multiple meals on a cold week. Proper cooking and prep techniques are Dave’s specialty! He will show you how to use only the best ingredients for classics and new soups. Recipes to include: cous cous & lemon soup, shrimp chowder, and gumbo. Supplies not provided by the library. Bio: Chef/Owner Dave attended Dumas Pere L’Ecole de Cuisine Culinary School, Glenview, Illinois in 1985, while working at the Ritz Carlton Hotel in Chicago.
He then studied in Lyon, France with Michelin 2-star Chef Michel Chabran. After returning to Chicago in 1987, Dave worked as a Chef at D&J Bistro in Lake Zurich, Illinois.
Shortly thereafter, he helped open Retro Bistro, Mt. Prospect as the Chef de Cuisine. Dave also worked at Le Titi de Paris and Charlie Trotters, two renowned French restaurants.
He then moved to Kohler Wisconsin to become Chef at The American Club, the Midwest’s only 5-Diamond resort, then returned to Chicago with his Wife and 2 kids to open Dave’s Specialty Foods.
Dave has won culinary awards, appeared on television and has been featured on numerous radio programs. After nineteen successful years in business, Dave’s Specialty Foods hosts cooking classes, caters small and large events, weddings and continues
to serve lunch and private dinners at his Mt. Prospect location.
